Jenny’s written work includes Eat to Outsmart Cancer, and a soon -to-be published low carb cookbook working alongside the cookery writer Katie Caldesi and Dr David Unwin. Jenny is passionate about good health and frequently runs health retreats in both the UK and Europe.

Richard Whall has spent almost 20 years working across the sport, health & education industry since completing his Masters degree in Exercise & Nutrition Science in 2000. With previous roles as diverse as Personal Trainer, Strength & Conditioning Coach, Multi-skills Educator and Primary School Teacher, he is now employed as Lecturer in Human Movement (Sport & PE) at the University of Central Lancashire. A naturally inquisitive individual with a love for all things movement, Richard enjoys a variety of activities but particularly running and walking in the beautiful Lake District, as well as experimenting with different approaches to food & nutrition to support his active lifestyle. In May 2019, Richard is taking on the Brathay 10in10 challenge, running 10 marathons in 10 days along the roads around Lake Windermere, all fuelled by real, low-carb, healthy fat foods.

Dr Ian Lake is a GP based in Stroud, Gloucestershire and is a founding member of the Public Health Collaboration. He has had type 1 diabetes for 24 years, spending most of that time with poor control. However, within a few weeks of starting a low carb, ketogenic diet, Dr Lake felt that his life had been completely transformed. He now advocates the use of low carb diets for the management of type 1 diabetes.
